You don't mention OS.
Windows98 comes with a Quickres utility that does this. Puts an icon in the
system tray, one can then right click on the icon and pick from a list of
resolution/color depth combinations. W95 can get this functionality using
the free Quickres "power toy" - do a google search for download information.
There is also a whole bunch of 3rd party utilities, free and for-pay, with
similar functionality. Also, the following utility
(http://qres.softwarecave.nl/) will allow per-program on-the-fly res
changing (but requires quickres installed).
