One interesting software encryption package that might be of use to you is
BestCrypt by Jetico (http://www.jetico.com/). The software, once logged in,
opens a file which is seen by Windows as an ordinary disk drive. The
difference is that the drive is actually encrypted. Any software that can
read/write to a standard Windows hard drive can write to the BestCrypt
emulated drive. If you cannot login properly, the file still remains but is
encrypted and not of much use.

The software is well documented, not very expensive and seems to work well.
